Choosing which meal plan to offer at a college or university is like going to an all-you-can-eat buffet—there are many choices, but some are better for you than others. To help today’s food service directors pick the right meal plan for their campus, The National Association of College and University Food Services (NACUFS) worked with Digitec to produce the eLearning course, Campus Meal Plans™. And NACUFS is using Digitec’s Knowledge Direct® WEB learning management system to serve up the course to its members.
Campus Meal Plans is a highly engaging scenario-based course. Learners take on the role of team leader as they guide their imaginary food services team through the process of choosing a meal plan for their campus. They discover the different types of meal plans and their characteristics, the role of campus culture in choosing a plan, how to measure a plan’s financial impact, what’s involved in rolling out a new meal plan, and then how to assess its effectiveness.
Along the way, a variety of engaging activities enable learners to self-check their understanding. An interactive spreadsheet provides the opportunity to play “what if” with meal plan costs and pricing. At the end of each step in the process, learners face a Challenge Me round where they use three case studies to apply what they’ve learned.
Ellen Behrens, NACUFS director of education says, “It was critical that NACUFS’ first online course have relevant and engaging content, and that it be delivered in a way that’s easy for our members to access. Feedback from our members shows not just two thumbs up, but dozens! And because it’s so user-friendly and reliable, we haven’t had to devote staff time to addressing problems with the system, so we can spend our time on marketing instead. We expected the momentum of registrations to drop after the first few months, but registrations continue to come in as word of the course continues to spread.”
